Resumo
Objetivo: Avaliar o consumo de alimentos ultraprocessados e fatores relacionados à alimentação de gestantes vegetarianas e veganas. Métodos: O estudo tem delineamento transversal, quantitativo e foi realizado em ambiente virtual. Foi aplicado um questionário sobre fatores relacionados à alimentação e foi realizada avaliação dietética utilizando o Registro Alimentar, aplicado em três dias não consecutivos, além de fatores relacionados à alimentação. Avaliou-se o consumo de alimentos ultraprocessados por meio da classificação NOVA, utilizada no Guia Alimentar para a População Brasileira. Foi avaliado também o parâmetro de frequência de refeições, utilizando o referencial de orientação alimentar para gestantes, do Ministério da Saúde. A avaliação da composição da dieta foi feita por meio do Dietbox Software Nutricional. As análises estatísticas foram realizadas no software SPSS (v16). Resultados: As voluntárias avaliadas (n=12) possuem um perfil com elevado grau de escolaridade e renda média. Dentre as principais mudanças encontradas no padrão alimentar durante a gestação, há a ingestão de carne, aumento do consumo de doces, carboidratos e ultraprocessados. A contribuição energética proveniente de ultraprocessados variou entre 9 e 41%, sendo que o hábito de cozinhar e o IMC pré-gestacional demonstraram relação com esse valor. O número médio de refeições por dia foi 4,5, sendo o mínimo 4 e máximo 6. Conclusão: Embora o consumo de ultraprocessados observado na amostra tenha sido abaixo do ponto de corte utilizado para classificar alto consumo, apresentou grande variabilidade. É fundamental apoio da família e de profissionais da saúde atualizados, que discutam sobre os impactos do ultraprocessados na gestação.

A questionnaire was applied on factors related to food and a dietary assessment was performed using the Food Record, applied on three non-consecutive days, in addition to factors related to food. The consumption of ultra-processed foods was evaluated using the NOVA classification, used in the Food Guide for the Brazilian Population. The parameter of frequency of meals was also evaluated, using the Ministry of Health reference for dietary guidance for pregnant women. The evaluation of diet composition was performed using Dietbox Nutricional Software. Statistical analyzes were performed using SPSS software (v16). Results The evaluated volunteers (n=12) have a profile with a high level of education and average income. Among the main changes found in the dietary pattern during pregnancy, there is the intake of meat, increased consumption of sweets, carbohydrates and ultra-processed foods. The energy contribution from ultra-processed foods varied between 9 and 41%, and the habit of cooking and pre-gestational BMI showed a relationship with this value. The average number of meals per day was 4.5, with a minimum of 4 and a maximum of 6. Conclusion Although the consumption of ultra-processed foods observed in the sample was below the cutoff point used to classify high consumption, it showed great variability. Support from the family and up-to-date health professionals is essential, who discuss the impacts of ultraprocessed foods during pregnancy.
