Resumo
O presente trabalho explora os desafios críticos enfrentados pela indústria de jerked beef na gestão de estoques de insumos essenciais, com foco particular nas adversidades logísticas que impactam o abastecimento de sal, um componente fundamental para a produção de jerked beef. O estudo concentra-se em analisar as dificuldades impostas por fatores como greves de caminhoneiros, a escassez de veículos de transporte e as condições precárias das rodovias, que frequentemente comprometem a cadeia de suprimentos e colocam em risco a continuidade das operações produtivas. A pesquisa adota um estudo de caso envolvendo a logística de transporte de sal extraído das salinas do Rio Grande do Norte para a região sudeste do Brasil, onde está localizada a indústria em análise. O objetivo principal é identificar os fatores que podem melhorar o processo de abastecimento, garantindo que o insumo chegue ao destino final de maneira eficiente e oportuna, mesmo em cenários de instabilidade. Além disso, o estudo aborda a sazonalidade do mercado de jerked beef, um aspecto que influencia significativamente o desempenho produtivo e financeiro da indústria. A pesquisa revisa a literatura sobre logística, gestão de estoques e estratégias de transporte, propondo soluções que visam não apenas mitigar os riscos associados às flutuações sazonais e aos desafios logísticos, mas também assegurar a viabilidade econômica da empresa no longo prazo. Através da análise detalhada dos componentes logísticos, incluindo estoques, localizações estratégicas e transportes, o trabalho oferece uma contribuição teórica e prática significativa, apresentando diretrizes para a melhoria contínua na gestão de insumos e na eficiência operacional da indústria de jerked beef. Os insights obtidos com este estudo podem ser aplicados na unidade comprovada e em outras do setor. Assim, o trabalho contribui para fortalecer a capacidade de adaptação e resiliência das organizações, permitindo que se enfrentem de maneira mais eficiente as constantes mudanças e desafios do mercado.
This work explores the critical challenges faced by the jerky industry in managing stocks of essential inputs, with a particular focus on the logistical adversities that impact the supply of salt, a fundamental component for jerky production. The study focuses on analyzing the difficulties imposed by factors such as truck drivers' strikes, the lack of transport vehicles and the precarious conditions of highways, which often compromise the supply chain and put the continuity of production operations at risk. The research adopts a case study involving the logistics of transporting salt extracted from the salt flats of Rio Grande do Norte to the southeast region of Brazil, where the industry under analysis is located. The main objective is to identify factors that can improve the supply process, ensuring that consumption reaches its final destination in an efficient and timely manner, even in unstable scenarios. Furthermore, the study addresses the seasonality of the jerked beef market, an aspect that significantly influences the industry's productive and financial performance. The research reviews the literature on logistics, inventory management and transportation strategies, proposing solutions that aim not only to mitigate the risks associated with seasonal fluctuations and logistical challenges, but also guarantee the company's economic protection in the long term. Through detailed analysis of logistical components, including stocks, strategic locations and transport, the work offers a significant theoretical and practical contribution, presenting guidelines for continuous improvement in input management and operational efficiency in the jerky industry. The insights gained from this study can be applied to the proven unit and others in the industry. Thus, the work contributes to strengthening the adaptation and resilience capacity of organizations, allowing them to face constant changes and challenges in the market more efficiently.
