O interesse dos processos industriais por catalisadores enzimáticos tem recebido muita atenção da sociedade por causa da preocupação em torno da sustentabilidade e potencial econômico em questão. Por estes aspectos, as pesquisas referentes a enzimas provenientes de frutos e seus resíduos estão cada vez mais prestigiadas no meio acadêmico. Estas biomoléculas possuem características de aumentar a atividade catalítica nas reações biológicas, na qual alteram a energia de ativação das mesmas. O poderio econômico em relação ao abacaxi para o Brasil, demonstra que, pesquisas estão sendo realizadas em função da enzima bromelina, que possui diversas aplicações industriais em diversos ramos. Cada vez mais estão sendo estudadas suas propriedades, nas quais possuem destaque propriedades antitumorais, imunológicas, digestivas, anti-inflamatórias e outras, atraindo tanto interesse para indústrias alimentícias quanto farmacêuticas. O contínuo e crescente uso da molécula bromelina, fomentado principalmente pela enzima, tem estimulado o desenvolvimento de técnicas e métodos de extração cada vez mais rentáveis e com maior seletividade quanto à molécula alvo. Posteriormente ao processo de separação, é necessário o emprego de técnicas e métodos para a purificação do componente de interesse. Neste contexto, destacam-se as técnicas de micelas reversas e sistemas bifásicos aquosos. Os processos de manipulação da bromelina estão diretamente ligados ao entendimento de sua estabilidade, avaliando parâmetros como, por exemplo, sua ativação e atividade catalítica. Dentro do contexto, o objetivo do presente trabalho foi promover um levantamento bibliográfico sobre os tópicos de extração, sistema de separação, estabilidade e aplicações da molécula em questão. A revisão se deu a partir das bases de dados Web of Science, Google Scholar, entre outros e demonstra que, por existir cada vez mais interesses socioeconômicos, 54,13% das pesquisas inerentes ao tema estão concentradas entre os anos de 2011-2021 e que pesquisas estão sendo realizadas desde 1957. O Brasil está progressivamente mostrando-se como um dos países que mais pesquisaram sobre o tópico, com publicações realizadas desde 2001 até o presente momento, demonstrando a necessidade de se ter uma revisão bibliográfica sobre o tópico a fim de compilar os principais resultados e discutir o interesse sobre o tema em questão a partir dos dados coletados.
The interest of industrial processes for enzymatic catalysts has received much attention from society because of the concern around sustainability and economic potential in question. Due to these aspects, the research regarding enzymes from fruits and their residues are increasingly prestigious in the academic world. These biomolecules have characteristics of increasing catalytic activity in biological reactions, in which they alter their activation energy. The economic power in relation to pineapple for Brazil, demonstrates that research is being carried out in function of the enzyme bromelain, which has several industrial applications in several branches. Their properties are increasingly being studied, in which they have prominent antitumor, immunological, digestive, anti-inflammatory and other properties, attracting both interest to food and pharmaceutical industries. The continuous and increasing use of the bromelain molecule, fostered mainly by the enzyme, has stimulated the development of techniques and extraction methods increasingly profitable and with greater selectivity regarding the target molecule. Further to the separation process, techniques and methods must be used to purify the component of interest. In this context, the techniques of reverse micelles and aqueous two-phase systems stand out. The processes of bromelain manipulation are directly linked to the understanding of its stability, evaluating parameters such as its activation and catalytic activity. Within the context, the objective of this work was to promote a bibliographic survey on the topics of extraction, separation system, stability and applications of the molecule in question. The review took place from the Web of Science databases, Google Scholar, among others and demonstrates that, because there are more and more socio economic interests, 54.13% of the research inherent to the theme are concentrated between the years 2011-2021 and that research has been conducted since 1957. Brazil is progressively showing itself as one of the most researched countries on the topic, with publications from 2001 to the present time, demonstrating the need to have a bibliographic review on the topic in order to compile the main results and discuss the interest on the subject in question from the collected data.
