Among The Functional Foods, The Prebiotics, Especially The Galactooligosaccharides (Gos), Have A Positive Effect On The Composition Of The Intestinal Microbiota, Contributing To The Population Increase Of Bifidobacterium And Lactobacillus. They Are Produced By The Transgalactosylation Reaction Of Lactose, By The Enzyme "-Galactosidase, Extracted From Several Sources, The Microbial Being The Most Common. In This Work, We Aimed To Isolate, Select And Identify "-Galactosidase Producing Yeasts For The Production Of Gos From Milk Kefir Grains, Since They Consist Of A Cluster Of Microorganisms In Symbiosis, Lactose Assimilators Or Not. Thus, Kefir Grains From Two Different Regions (São Paulo And Santa Catarina) Were Fermented In Different Media With Lactose, For Subsequent Isolation Of Microorganisms, Preferably Yeasts.
