With advancing age, nutrition has an important role, especially in the elderly. The supply and use of foods for improving the quality of life and prevent diseases, have been necessary in all age groups. The aim was to bring awareness of issues related to nutrition, with the help of nutrition education as a tool. This was a study conducted with a group of elderly participants of the Open University the third age-(UNATI) of an institution of higher education in the city of White-PR Duck. Participants were 28 people in total, 25 females and 3 males aged over 60 years old. Applied a questionnaire, through nutritional knowledge scale before and after educational intervention to identify the level of learning about nutrition. The results were satisfactory, it was observed a significant learning level in almost all matters.

Method: Description of the didactic resource and the ways of use according to the guidelines for food and nutrition education. Result: The developed content originated the article Description of Didactic Resource and Method for Food and Nutrition Education. Conclusion: The importance of food and nutrition education is recognized for the success of interventions but it is still necessary to make recommendations, detail project development and implementation, test, compare and engage the entire community. Specific training for food and nutrition education is essential. Teaching resource “Um, Dois, Diversão com Arroz” can contribute to the development of food and nutrition education projects, as its method of use considers the recommendations; It enables the detailing of methods and the reproduction of studies and can integrate multidisciplinary and multicomponent interventions that include recommended success factors with adequate duration and sample and short, medium and long term evaluation.
